- In a medium bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, pepper, oregano, and thyme.
- Add chicken breasts to the marinade, turning to coat. Cover and refrigerate for at least 30 minutes (up to 4 hours).
- Preheat grill (or grill pan) to medium-high heat. Lightly oil the grates.
- Grill chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F.
- Remove from the grill and rest for 5 minutes. Sprinkle with fresh parsley and serve with lemon wedges.
