Method
- Cook vermicelli noodles according to package directions. Drain and rinse with cold water.
- Prepare peanut sauce: In a small bowl, whisk together peanut butter, hoisin sauce, soy sauce, rice vinegar, garlic, water, and sriracha until smooth. Set aside.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5–10 seconds until softened. Place it on a clean surface.
- Layer lettuce, noodles, herbs, cucumber, carrot, and 2 shrimp halves in the center of the wrapper.
- Fold the sides inward, then roll tightly from the bottom up to enclose the filling.
- Repeat with remaining wrappers and ingredients.
- Serve fresh rolls immediately with peanut sauce.
