- Heat olive oil in a large skillet over medium-high heat. Add onion and cook for 3 minutes until softened. Stir in garlic and cook another 30 seconds.
- Add ground beef and cook until browned, breaking it up with a spoon, about 6–7 minutes. Drain excess fat if necessary.
- Stir in taco seasoning and water. Simmer for 3–4 minutes until the mixture thickens.
- Warm tortillas in a dry skillet or microwave until pliable.
- Fill each tortilla with beef mixture and top with lettuce, cheese, tomatoes, sour cream, and salsa.
- Garnish with cilantro and a squeeze of lime juice. Serve immediately.
