Lemon Herb Grilled Chicken

Ingredients
 
 

  • 2 lbs skinless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp lemon zest
  • 3 garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 tbsp fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, pepper, oregano, and thyme.
  2. Add chicken breasts to the marinade, turning to coat. Cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat grill (or grill pan) to medium-high heat. Lightly oil the grates.
  4. Grill chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F.
  5. Remove from the grill and rest for 5 minutes. Sprinkle with fresh parsley and serve with lemon wedges.

Notes
