Ingredients
 
 

  • 1 1/2 lbs chicken breasts sliced into strips
  • 2 tbsp olive oil divided
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium onion sliced
  • 2 garlic cloves minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • 8 small flour tortillas
  • Optional toppings: sour cream, salsa, guacamole, shredded cheese, fresh cilantro

Method
 

  1. In a large bowl, combine chicken strips with 1 tbsp olive oil, garlic, chili powder, cumin, paprika, salt, pepper, and lime juice. Mix well and let marinate for 10 minutes (optional for deeper flavor).
  2. Heat remaining olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, add bell peppers and onion. Cook 5–6 minutes until tender-crisp.
  4. Return chicken to the skillet and toss everything together until well combined and heated through.
  5. Warm tortillas in a dry pan or microwave.
  6. Serve fajita mixture with warm tortillas and toppings of choice.

Notes
