Ingredients
 
 

  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley chopped
  • 3 cups cooked white rice or brown rice

Method
 

  1. Pat shrimp dry with paper towels. Season with salt, pepper, and red pepper flakes if using.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook 2 minutes per side until pink and opaque. Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add butter and garlic, cooking 1 minute until fragrant.
  4. Stir in lemon juice and zest, scraping up any browned bits from the pan.
  5. Return shrimp to the skillet, tossing to coat in the garlic butter sauce. Cook 1 more minute to heat through.
  6. Serve shrimp and sauce over warm rice, garnished with fresh parsley.
