Vietnamese Chicken Pho (Phở Gà)

Ingredients
- 1 whole chicken about 3–4 lbs
- 1 onion halved
- 1 piece 3-inch ginger, sliced
- 3 star anise pods
- 1 cinnamon stick
- 4 whole cloves
- 1 tbsp coriander seeds
- 10 cups water
- 2 tbsp fish sauce
- 1 tbsp rock sugar or brown sugar
- 1 tsp salt
- 12 oz dried rice noodles
- Toppings:
- Fresh Thai basil
- Cilantro
- Bean sprouts
- Lime wedges
- Sliced chili peppers
- Hoisin sauce
- Sriracha
Method
- Char onion and ginger: Place onion halves and ginger slices under a broiler for 5 minutes until lightly charred.
- In a large pot, add chicken and 10 cups of water. Bring to a boil, skimming foam. Add charred onion, ginger, star anise, cinnamon, cloves, and coriander seeds.
- Simmer uncovered for 1 hour 15 minutes until chicken is tender. Remove chicken, let cool slightly, then shred the meat. Strain broth through a sieve and return to the pot.
- Season broth with fish sauce, sugar, and salt. Keep warm.
- Cook rice noodles according to package directions. Drain and rinse briefly with cold water.
- To serve: Divide noodles into bowls, add shredded chicken, and ladle hot broth over the top.
- Garnish with fresh herbs, bean sprouts, lime wedges, chili, and sauces as desired.
Notes
For a richer broth, use both chicken bones and a whole chicken.
