Ingredients
 
 

  • 4 large eggs
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1/2 small onion diced
  • 1/2 red bell pepper diced
  • 1/2 cup spinach chopped
  • 1/4 cup mushrooms sliced
  • 1/2 cup shredded cheddar cheese

Method
 

  1. In a bowl, whisk together eggs, milk, salt, and pepper until light and frothy.
  2. Heat butter in a non-stick skillet over medium heat. Add onion, bell pepper, spinach, and mushrooms. Cook 3–4 minutes until softened.
  3. Pour egg mixture evenly over the vegetables. Let cook without stirring for 2–3 minutes until the edges start to set.
  4. Sprinkle cheese on top, then gently fold the omelet in half with a spatula.
  5. Cook 1–2 more minutes until cheese melts and eggs are cooked through.
  6. Slide onto a plate and serve hot.
