Ingredients
 
 

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 15 oz black beans rinsed and drained
  • 15 oz kidney beans rinsed and drained
  • 28 oz diced tomatoes
  • 6 oz tomato paste
  • 1 cup chicken broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking 3–4 minutes until softened.
  2. Add ground turkey and cook until browned, about 6–7 minutes, breaking it up with a spoon.
  3. Stir in bell pepper, beans, diced tomatoes, tomato paste, and chicken broth.
  4. Add chili powder, cumin, paprika, salt, pepper, and cayenne. Stir well.
  5. Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, stirring occasionally.
  6. Taste and adjust seasoning. Garnish with fresh cilantro before serving.
