Ingredients
- 2 tbsp olive oil
- 1 lb ground turkey
- 1 medium onion chopped
- 3 garlic cloves minced
- 1 red bell pepper diced
- 15 oz black beans rinsed and drained
- 15 oz kidney beans rinsed and drained
- 28 oz diced tomatoes
- 6 oz tomato paste
- 1 cup chicken broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 2 tbsp fresh cilantro chopped
Method
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking 3–4 minutes until softened.
- Add ground turkey and cook until browned, about 6–7 minutes, breaking it up with a spoon.
- Stir in bell pepper, beans, diced tomatoes, tomato paste, and chicken broth.
- Add chili powder, cumin, paprika, salt, pepper, and cayenne. Stir well.
- Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, stirring occasionally.
- Taste and adjust seasoning. Garnish with fresh cilantro before serving.
