Method
- Preheat oven to 400°F (200°C).
- Pat pork tenderloin dry and season all over with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear pork for 2–3 minutes per side until browned.
- Transfer skillet to the oven and roast for 20–25 minutes, until internal temperature reaches 145°F (63°C). Remove and rest for 5 minutes before slicing.
- While pork rests, melt butter in the same skillet over medium heat. Add garlic, thyme, and rosemary. Cook 1 minute until fragrant.
- Stir in chicken broth and lemon juice. Simmer 3 minutes, scraping up browned bits, until sauce slightly reduces.
- Slice pork and spoon garlic herb sauce over the top. Garnish with parsley and serve.
