Ingredients
 
 

  • 1 1/2 lbs pork tenderloin
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
  • 1/2 cup chicken broth
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat pork tenderloin dry and season all over with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear pork for 2–3 minutes per side until browned.
  4. Transfer skillet to the oven and roast for 20–25 minutes, until internal temperature reaches 145°F (63°C). Remove and rest for 5 minutes before slicing.
  5. While pork rests, melt butter in the same skillet over medium heat. Add garlic, thyme, and rosemary. Cook 1 minute until fragrant.
  6. Stir in chicken broth and lemon juice. Simmer 3 minutes, scraping up browned bits, until sauce slightly reduces.
  7. Slice pork and spoon garlic herb sauce over the top. Garnish with parsley and serve.
