Ingredients
 
 

  • 4 chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 red bell pepper diced
  • 1 cup long-grain white rice
  • 2 1/4 cups chicken broth
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1 leaf
  • 1/2 cup frozen peas
  • 2 tbsp fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same pot, add onion, garlic, and bell pepper. Cook 3–4 minutes until softened.
  4. Stir in rice, chicken broth, paprika, thyme, and bay leaf. Mix well.
  5. Nestle chicken thighs back into the pot on top of the rice. Bring to a boil, then reduce heat to low. Cover and simmer for 30–35 minutes until rice is tender and chicken is cooked through (internal temp 165°F / 74°C).
  6. Remove bay leaf, stir in peas, and let sit covered for 5 minutes.
  7. Garnish with parsley and serve with lemon wedges.

Notes

For extra flavor, use smoked paprika or add a pinch of saffron.
You can substitute chicken breasts, but reduce cooking time slightly.
