Grilled Shrimp Skewers

Ingredients
 
 

  • 1 1/2 lbs large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning
  • 2 tbsp fresh parsley chopped
  • Lemon wedges for serving
  • Wooden or metal skewers

Method
 

  1. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  2. In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, salt, pepper, and oregano.
  3. Add shrimp to the marinade, toss to coat, and refrigerate for 15 minutes.
  4. Thread shrimp onto skewers, about 4–5 shrimp per skewer.
  5. Preheat grill to medium-high heat. Grill shrimp for 2–3 minutes per side until pink and slightly charred.
  6. Remove from grill, sprinkle with parsley, and serve hot with lemon wedges.

Notes

For extra flavor, add a pinch of chili flakes to the marinade.
