  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 large ripe banana mashed
  • 3/4 cup cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter melted
  • Butter or oil for cooking
  • Maple syrup and fresh fruit for serving

Method
 

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, mash the banana until smooth. Stir in milk, egg, vanilla, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix – the batter should be slightly lumpy.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about 1/4 cup of batter per pancake. Cook 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until golden.
  6. Serve warm with maple syrup, sliced bananas, or your favorite toppings.
