Ingredients
 
 

  • 4 bone-in skin-on chicken thighs
  • 1 1/2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 4 garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 2 tbsp fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C). Grease or line a large baking sheet with parchment paper.
  2. In a large bowl, toss potatoes with 2 tbsp olive oil, half the garlic, salt, pepper, paprika, and thyme.
  3. Arrange chicken thighs and seasoned potatoes on the baking sheet. Drizzle chicken with remaining olive oil and rub with garlic, salt, and pepper.
  4. Roast for 45–50 minutes, flipping potatoes halfway through, until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crisp.
  5. Garnish with fresh parsley and serve with lemon wedges.

Notes
