Ingredients
 
 

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 4 cups potatoes peeled and diced (about 2 lbs)
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 cup whole milk or cream for richer soup
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh chives chopped
  • Optional toppings: extra cheese crumbled bacon, sour cream

Method
 

  1. In a large pot, heat butter and olive oil over medium heat. Add onion and garlic, cooking for 3–4 minutes until softened.
  2. Stir in potatoes, carrots, and celery. Cook for 5 minutes, stirring occasionally.
  3. Pour in vegetable broth. Add salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  4. Using an immersion blender (or transferring in batches to a blender), blend the soup until creamy and smooth.
  5. Stir in milk and cheddar cheese. Simmer for 3–4 minutes until warmed through and thickened.
  6. Ladle into bowls and garnish with chives and optional toppings.
