Ingredients

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 lb mascarpone cheese softened
  • 2 cups strong brewed espresso or coffee cooled
  • 3 tbsp coffee liqueur optional
  • 7 oz ladyfinger cookies
  • 2 tbsp unsweetened cocoa powder
  • 1 oz dark chocolate grated (optional, for garnish)

Method

  1. In a heatproof bowl, whisk egg yolks and sugar together. Place bowl over a pot of simmering water (double boiler method) and whisk for 5 minutes until thick and pale. Remove from heat and let cool slightly.
  2. In another bowl, whip heavy cream until stiff peaks form.
  3. In a large bowl, combine mascarpone cheese with cooled egg yolk mixture until smooth. Gently fold in whipped cream until incorporated.
  4. In a shallow dish, mix espresso with coffee liqueur if using.
  5. Quickly dip each ladyfinger into the coffee mixture (do not soak too long) and arrange in a single layer in a 9x13-inch dish.
  6. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and remaining cream mixture.
  7. Cover and refrigerate for at least 4 hours, or overnight for best results.
  8. Before serving, dust generously with cocoa powder and sprinkle with grated chocolate.
