Ingredients
- 1 tbsp olive oil
- 1 medium onion chopped
- 3 carrots sliced
- 2 celery stalks sliced
- 3 garlic cloves minced
- 8 cups chicken broth
- 2 bay leaves
- 1 tsp dried thyme
- 1/2 tsp salt adjust to taste
- 1/2 tsp black pepper
- 2 cups cooked chicken shredded
- 2 cups egg noodles
- 2 tbsp fresh parsley chopped
- Lemon wedges for serving (optional)
Method
- Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook 5–6 minutes until softened.
- Pour in chicken broth, then add bay leaves, thyme, salt, and pepper. Bring to a boil, reduce heat, and simmer for 20 minutes.
- Stir in shredded chicken and egg noodles. Cook 8–10 minutes until noodles are tender.
- Remove bay leaves and adjust seasoning to taste.
- Garnish with parsley and serve hot with optional lemon wedges.
Notes
Use leftover rotisserie chicken for convenience.
For extra richness, stir in 1/2 cup cream at the end.
This soup freezes well – just leave out the noodles and add them fresh when reheating.
