Ingredients
 
 

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 3 garlic cloves minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 2 cups cooked chicken shredded
  • 2 cups egg noodles
  • 2 tbsp fresh parsley chopped
  • Lemon wedges for serving (optional)

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook 5–6 minutes until softened.
  2. Pour in chicken broth, then add bay leaves, thyme, salt, and pepper. Bring to a boil, reduce heat, and simmer for 20 minutes.
  3. Stir in shredded chicken and egg noodles. Cook 8–10 minutes until noodles are tender.
  4. Remove bay leaves and adjust seasoning to taste.
  5. Garnish with parsley and serve hot with optional lemon wedges.

Notes

Use leftover rotisserie chicken for convenience.
