Chicken Marsala

Chicken Marsala is an Italian-American classic made with tender chicken breasts simmered in a rich mushroom and Marsala wine sauce. Ingredients
 
 

  • 2 lbs chicken breasts
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz mushrooms sliced
  • 2 garlic cloves minced
  • 3/4 cup Marsala wine
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream optional, for a creamy version
  • 2 tbsp fresh parsley chopped

Method
 

  1. Place chicken breasts between plastic wrap and pound lightly to even thickness. Season with salt and pepper.
  2. Dredge chicken lightly in flour, shaking off excess.
  3. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, melt remaining butter. Add mushrooms and cook 5 minutes until golden. Stir in garlic and cook 30 seconds.
  5. Deglaze the pan with Marsala wine, scraping up any browned bits. Simmer for 2 minutes.
  6. Add chicken broth and simmer until reduced by half, about 5 minutes. Stir in heavy cream if using.
  7. Return chicken to skillet, spoon sauce over the top, and simmer 2–3 minutes to warm through.
  8. Garnish with parsley and serve hot with pasta, rice, or mashed potatoes.

Notes

For the most authentic flavor, use dry Marsala wine.
This dish can also be made with chicken thighs instead of breasts.
