Ingredients
 
 

  • 24 oz cod fillets
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 2 tbsp tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. Place cod fillets in the dish and pat dry with paper towels.
  3. In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, salt, pepper, and paprika.
  4. Brush the mixture evenly over the cod fillets.
  5. Bake for 15–18 minutes, or until fish flakes easily with a fork.
  6. Garnish with parsley and serve hot with lemon wedges.
