Method
- Toast the bread slices until golden and crisp.
- Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash with a fork and season with salt, pepper, and red pepper flakes.
- Heat olive oil or butter in a small skillet over medium heat. Cook eggs to your preference (fried, sunny-side-up, or scrambled).
- Spread the mashed avocado evenly on each slice of toast.
- Top with the cooked eggs. Garnish with parsley or chives and serve with a squeeze of lemon.
