Jiaozi (Chinese Dumplings)

Chinese Dumplings, known as Jiaozi, are a traditional dish made with thin dough wrappers filled with a savory mixture of ground meat and vegetables. Pan-fried until crispy on the bottom and steamed to tender perfection, they’re often called potstickers or gyoza in Japan. Dumplings are a staple of Chinese cuisine, especially during Lunar New Year celebrations, and can be enjoyed as an appetizer, snack, or main dish. Ingredients
 
 

  • Wrappers:
  • 36 round dumpling wrappers store-bought or homemade
  • Filling:
  • 1 lb ground pork or chicken
  • 2 cups chinese cabbage finely chopped
  • 2 green onions finely chopped
  • 2 garlic cloves minced
  • 1 tbsp ginger minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For Cooking:
  • 2 tbsp vegetable oil
  • 1/2 cup water
  • Dipping Sauce:
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp chili flakes optional

Method
 

  1. Prepare filling: In a large bowl, combine pork, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, salt, and pepper. Mix well until evenly combined.
  2. Assemble dumplings: Place 1 tablespoon of filling in the center of a wrapper. Moisten edges with water, fold in half, and pleat the edges to seal tightly. Repeat with remaining wrappers and filling.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Place dumplings flat-side down in a single layer and cook for 2–3 minutes until bottoms are golden brown.
  4. Carefully add 1/4 cup water to the skillet and immediately cover with a lid. Steam dumplings for 5–6 minutes until filling is cooked through and wrappers are tender.
  5. Remove lid and let dumplings crisp for 1–2 more minutes before serving.
  6. Whisk together dipping sauce ingredients in a small bowl and serve alongside dumplings.

Notes

For variety, substitute pork with shrimp or make a vegetarian version with mushrooms and tofu.
Freeze uncooked dumplings on a tray, then transfer to a bag for easy cooking later.
