Ingredients
 
 

  • 1/2 cup unsalted butter 1 stick
  • 6 oz semi-sweet chocolate chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/4 tsp salt
  • Butter and cocoa powder for ramekins
  • Powdered sugar for serving
  • Vanilla ice cream or whipped cream for serving

Method
 

  1. Preheat oven to 425°F (220°C). Grease 4 ramekins with butter and dust with cocoa powder. Place on a baking sheet.
  2. In a heatproof bowl, melt butter and chocolate together over simmering water or in the microwave until smooth. Let cool slightly.
  3. In another bowl, whisk eggs, egg yolks, and sugar until pale and thick.
  4. Gently fold the melted chocolate mixture into the eggs. Sift in flour and salt, stirring just until combined.
  5. Divide batter evenly among prepared ramekins.
  6. Bake for 11–12 minutes until edges are firm but centers are still soft. Do not overbake.
  7. Let cakes rest 1 minute, then carefully invert onto plates.
  8. Dust with powdered sugar and serve immediately with ice cream or whipped cream.

Notes
